1.草鱼洗净收拾干净,片成鱼片,剁好鱼头和鱼骨(我请卖鱼的收拾好)。

2.鱼片放入碗中,加入鸡蛋清,盐,淀粉和10克料酒抓匀。

3.葱切段,姜切片,蒜切末,干辣椒切段,花椒准备好备用。

4.黄豆芽清洗干净,用沸水焯烫3分钟至断生。

5.捞出后辅在盘中备用。

6.中火加热炒锅中的油,放入剁碎的郫县豆瓣酱及一半的干辣椒,改小火慢炒出红油。

7.放入葱姜蒜炒出香味。

9.翻炒后调入剩余的料酒和盐。

10.再加多半锅沸水。

11.将鱼烧至沸腾入味。

12.然后将鱼片一片一片平放到滚汤中,煮1一2分钟即可捞出。

13.把盛豆芽的大盘取过来,将鱼片等汤汤水水都倒入盘中。
