食材用料龙虾
1000g小米椒
6-10个大蒜头
一个老姜
一块香葱杆
适量料酒
适量香醋
适量相克食物盐
适量老抽
适量香菜叶

1.准备好龙虾

2.掐去虾头

3.从虾尾部抽出虾肠

4.将收拾好的虾洗净沥干水分

5.将小米椒,老姜,大蒜籽和香葱杆洗净

6.将所有调味料切好备用

7.将锅洗净烧干,倒入足量的食用油

8.同时将调味料倒入适量小火炒香

9.将龙虾倒入适量大火爆炒,要不停的翻炒,避免调味料糊锅

10.待龙虾爆香,将料酒、香醋倒入锅中,翻炒均匀后,倒入适量的老抽、盐和清水,盖上锅盖焖煮片刻,至入味,收干水份即可

11.装盘,摆上香菜叶点缀一下小贴士
1.将龙虾掐去虾头,虾尾的中间一片可以扯出虾肠,这样便于清洗,而且容易入味
2.小米椒根据喜好和口味调节
3.调味料必须在油下锅的时候紧跟着下锅,然后小火翻炒,避免糊锅
4.龙虾爆炒的时候要不停翻炒,多爆一会儿
