1.豆腐洗干净,切成小方块

2.水里放盐烧开,放入切好的豆腐块,煮2分钟(这一步是为了去腥味,可省略)

3.煮好后捞出待用

4.牛肉剁成肉糜待用

6.葱切碎待用

7.锅里大火热油关小火,放入蒜蓉姜蓉炒香

8.加入一匙羹豆瓣酱继续炒出红油

9.放入牛肉末继续翻炒,炒香后加入少许料酒、生抽和老抽(老抽为了上色,可省略)

10.炒香的料加入适量的水(适量是指刚好没过豆腐块

11.轻轻推散豆腐块,大火煮

12.大火煮至水份剩下三分一后加入一匙羹辣椒面和一匙羹花椒粉,轻轻拌匀。(视个人喜好增减辣椒面花椒粉的量,我这个量不麻不辣,就一个字:香)

13.拌匀后的豆腐加入水淀粉勾芡,之后加入少许盐调味(视情况加盐)加入葱花拌匀,即可上碟

肉末尽可能选牛肉,这样的成品才香才正宗的味儿。煮久一点豆腐会入味点,我加的水煮到快干时豆腐的味道刚好。
