[size=4]面粉 鸡蛋 盐 水的简单组合,随意撒点葱花,就是充满金黄色能量的一餐。[/size]

[size=4]糖醋荷包蛋我很早就听说了,一直没尝试,直到吃到朋友做的才有种相见恨晚的感觉。外层酱汁酸甜浓郁,内里软嫩入味,忍不住戳破软金似的溏心,看它顺着汁水缓缓流淌,治愈一切没胃口。[/size]

[size=4]1、碗中放入3个鸡蛋、5g盐、 2汤勺(约90g)中筋面粉、 1汤勺(约25g)葱花、2汤勺(约120g)水,搅拌均匀,静置15分钟醒面。[/size]
[size=4]*喜欢表面光滑的效果可以将半汤勺(约20g)中筋面粉替换成木薯淀粉。[/size]
[size=4]*以上用量约能煎6张蛋饼。[/size]

[size=4]1、秘制糖醋汁:半勺老抽、1勺生抽、1勺蚝油、2勺番茄酱、1勺白糖、1/4勺盐、2勺香醋、1勺淀粉和300g清水,搅匀。[/size]
[size=4]*以上料汁对应做6个糖醋荷包蛋。[/size]

[size=4]2、中高火预热锅,倒入1汤勺(约70g)食用油,热锅冷油打入鸡蛋(建议新手单次煎一个蛋慢慢来),单面煎约40秒,翻面煎约20秒 ,至两面金黄后,关火盛出。[/size]
[size=4]*我这里是溏心效果,用的是无菌蛋。爱吃全熟蛋的朋友可根据蛋的状态适当延长煎制时间。[/size]

[size=4]3、锅内留底油,开中高火,油热后放入1勺蒜末翻炒出香味,倒入秘制糖醋汁和煎好的荷包蛋,煮至沸腾后,继续翻炒约1分钟至汤汁浓稠,关火盛出,可撒葱花和白芝麻装饰。[/size]
